The Mutant Bee was the titular insectoid character from one of Vincent Van Ghoul's movies, the Mutant Bee.
Van Ghoul hired an actor to play the creature when he was trying to start a reality show to scare his dinner guests, and Shaggy Rogers and Scooby-Doo were his first "victims."

Season one
Vincent Van Ghoul opened a door and the Mutant Bee came out, along with Dr. Phobos and Professor Jantzen to frighten his house guests. In the middle a huge demon appeared taking them all down, grabbing the Mutant Bee by its arm and cracking it and threw him against the wall. The demon was called Nightfright and told Shaggy, Scooby, and Vincent to die. After Nightfright was unmasked, it was explained he paid Mutant Bee, Dr. Phobos, and Professor Jantzen for being victims.
After Mystery Inc.'s dinner, the Mutant Bee appeared, but it was just Vincent Van Ghoul who arrived with dessert. (Nightfright)
